Ingredients
For yeast
- 2 tsp dry yeast
- 2 tsp sugar
- ½ cup warm water
- 2 ½ cup all purpose flour/ maida
- 1 tsp garlic powder or finely chopped garlic
- ½ tsp oregano
- ½ tsp ground pepper powder (optional)
- 1 tsp salt
- ½ cup milk
- 1 tsp oil
- 1 tsp cornmeal or semolina
- 1 cup shredded mozzarella cheese
- ¼ tsp salt
- 2 tbsp melted unsalted butter
- 2 tbsp finely chopped garlic (10 garlic cloves)
- 2 tsp chopped cilantro or parsley leaves
- 1 tsp chilli flakes
- ½ tsp oregano
Preparation
For yeast :
Add sugar, warm water and yeast to a bowl and let it rest for 10 minutes.
Dough :
Dough :
In a big bowl, add flour, garlic powder, oregano, pepper and salt. Make a well in the center, pour the yeast mixture, milk and oil. Mix everything together with a wooden spoon until everything is combined. Take out the dough on a floured surface and knead it, about 5 minutes, until a smooth dough is formed. If using a stand mixer, beat the dough for 3 minutes on medium speed with dough hook attachment. Place the dough in oiled bowl and coat the dough with oil as well.


Cover the bowl tightly with plastic wrap or plate and set aside at room temperature until doubled in size, about 1 hour, 30 minutes.


Preheat the oven to 450℉/ 230℃ , Line the baking sheet with parchment paper and sprinkle with cornmeal or semolina on parchment paper. Set this aside.
Cut the dough into two equal halves, knead lightly and make smooth balls. let them rest for 15 minutes.
Add finely chopped garlic, chopped cilantro/parsley leaves, chili flakes, salt and oregano to the melted unsalted butter. keep it aside.
Roll out a dough ball into 10 inch circle and place it on the prepared baking sheet.
Brush the dough with melted garlic butter.

Brush the dough with melted garlic butter.

Fold and enclose the dough, pressing to seal. Slice the dough 1 inch apart. Brush the top with melted garlic butter.


Bake in a preheated for 15 to 17 minutes, until golden brown. Let it cool slightly and pull apart into breadsticks and serve with marinara sauce or tomato sauce.
Repeat the process with the remaining dough and ingredients.
