Eggless Strawberry Cake

Soft eggless sponge cake, made with fresh strawberries. Recipe Oven temperature :  350℉(180℃)  Bake time : 30 to 35 minutes Yield : 1 (8 inch round cake)  Ingredients 1¼ cup all purpose flour (maida) ¼ cup cornstarch 1 tsp baking powder ½ tsp baking soda ¼ tsp salt ¼ cup yogurt(curd) ½ cup neutral oil ¾ cup + 2 Tbsp powdered sugar ½ cup strawberry puree (blended fresh strawberries) 1 tsp vanilla extract 1 tbsp white vinegar Pink gel color (optional) Directions Preheat oven to 350℉(180℃).  Line a baking pan with parchment paper.  In a large bowl, sift in flour, cornstarch, baking powder, baking soda and salt. Give it a mix. In another bowl, add yogurt and powdered sugar, mix it well using a wire whisk, until smooth consistency is attained. Add strawberry puree, vanilla extract and vinegar. Combine everything well. To the sifted flour, add liquid mixture and the oil. Optional : Add 1 drop of pink gel color. Mix gently just until everything is combined. Do not over mix. Gulab jamun is a popular Indian dessert. Soft, fried dough balls soaked in sugar syrup.  I made this gulab jamun inspired cake with moist cardamom cake, gulab jamun filling and covered with delicious whipped cream frosting. I used store bought mix to make gulab jamuns and made sugar syrup as per packet  instructions. Cranberry Orange Muffins

Easy, super moist and dairy free - cranberry orange muffins recipe. Recipe   Yield : 12 to 14 muffins  Bake time : 25 minutes  Oven temperature : 350F/180C Ingredients    1 2/3 cup all purpose flour  3/4 cup cane sugar 1 1/2 tsp baking powder  1/4 tsp baking soda 1/2 tsp salt 1 cup cranberries ( dried or fresh) 2 eggs 3/4 cup oil 1/2 cup milk of your choice 1/4 cup orange juice 1 tsp orange zest 1 tsp vanilla extract  Steps Preheat oven to 350 F. Line muffin pan with cupcake liners and spray with oil. Set aside. In a large mixing bowl, add all purpose flour, sugar, baking powder, baking soda and salt. Mix well and keep it aside. In another bowl, add eggs, oil, orange juice, orange zest, milk and vanilla extract. Mix until well combined. Pour the wet ingredients mixture into the flour mixture. Pumpkin Ginger Bread

  Recipe  Yield : 1 loaf (9x5) Oven temperature : 325℉/160℃ Bake time : 60 minutes Ingredients 1½ cup all purpose flour, or whole wheat flour 1 tsp cinnamon powder ½ tsp dry ginger powder ¼ tsp ground cloves ¼ tsp freshly grated nutmeg or ground nutmeg ½ tsp salt 1 tsp baking soda ½ tsp baking powder 1 cup dark brown sugar 1 cup pumpkin purée ½ cup oil 2 Tbsp ground flax seeds + ¼ cup water,  or 2 eggs ¼ cup milk of choice 2 Tbsp chopped candied ginger,  or fresh ginger Steps Preheat oven to 325℉/160℃ for 15 minutes. Line a 9x5 inch loaf pan with parchment paper and lightly spray with oil. To make flax mixture : In a cup, mix ground flax seeds and water. Set this aside. In a large mixing bowl, add flour, spices, salt, baking soda and baking powder. Mix them with a whisk. In another bowl, mix dark brown sugar, pumpkin purée, oil, flax mixture or eggs and milk of choice. Add the wet ingredients to the dry ingredients, mix everything together until well combined.  Stir in chopped candied

Marbled Banana Bread

Amazing banana bread with chocolate swirls. Recipe Yield : 1 Loaf  Bake time : 55 minutes Oven Temperature : 350℉/180℃ Ingredients ½ cup (120g) oil 1 cup (200g) white sugar 2 eggs ½ tsp vanilla extract 3 bananas, mashed 1½ cup (198g) all purpose flour/ maida ½ tsp cinnamon powder 1 tsp baking soda ½ salt ¼ cup (25g) walnuts, chopped ½ cup (80g) chocolate chips Steps Preheat the oven to  350℉/180℃.  Grease and dust a loaf pan (9x5 inch) with flour or line it with parchment paper overhanging on sides. In a bowl, beat oil and sugar for 2 minutes using a hand whisk or electric mixer. Add eggs, vanilla extract and mashed bananas. Mix until well combined. Sift in flour, baking soda, salt, cinnamon powder. Add chopped walnuts. Gently mix everything together using a spatula or whisk. Do not over mix the batter.
