Pumpkin Ginger Bread

  Recipe  Yield : 1 loaf (9x5) Oven temperature : 325℉/160℃ Bake time : 60 minutes Ingredients 1½ cup all purpose flour, or whole wheat flour 1 tsp cinnamon powder ½ tsp dry ginger powder ¼ tsp ground cloves ¼ tsp freshly grated nutmeg or ground nutmeg ½ tsp salt 1 tsp baking soda ½ tsp baking powder 1 cup dark brown sugar 1 cup pumpkin purée ½ cup oil 2 Tbsp ground flax seeds + ¼ cup water,  or 2 eggs ¼ cup milk of choice 2 Tbsp chopped candied ginger,  or fresh ginger Steps Preheat oven to 325℉/160℃ for 15 minutes. Line a 9x5 inch loaf pan with parchment paper and lightly spray with oil. To make flax mixture : In a cup, mix ground flax seeds and water. Set this aside. In a large mixing bowl, add flour, spices, salt, baking soda and baking powder. Mix them with a whisk. In another bowl, mix dark brown sugar, pumpkin purée, oil, flax mixture or eggs and milk of choice. Add the wet ingredients to the dry ingredients, mix everything together until well combined.  Stir in chopped candied

Focaccia Bread

Focaccia is an Italian flat bread. It's a cross between pizza and bread. It is crunchy on outside and soft in the middle. It can be topped with any vegetable or cheese, just like pizza. Most of the focaccia breads are made using herbs like rosemary, thyme, garlic and other Italian herbs.  In this recipe, i have used rosemary, garlic and red chili flakes. You can also make plain focaccia using olive oil and salt. Recipe Servings : 6 Temperature: 425℉/ 220℃ Prep time : 2 hrs Cook time : 25 minutes Ingredients For dough 2 ¼ tsp dry yeast (1 packet) 1 tsp honey or sugar 1 cup warm water 2 ½ cup all purpose flour/ maida ¾ tsp salt ½ tsp garlic powder(optional) 2 tbsp olive oil Infused olive oil ¼ cup olive oil 2 tbsp chopped fresh garlic  1 tsp chopped rosemary ½ tsp red chilli flakes ½ tsp salt Instructions To activate the yeast, add yeast and honey to warm water(not hot) in a small bowl. Banana Blueberry Muffins - Vegan

Easy banana blueberry muffins recipe without eggs and diary. Recipe Yield : 12 muffins Cook time : 25 minutes Temperature : 350℉/180℃ Ingredients 4 ripe bananas ¾ cup sugar ⅓ cup oil 1 tbsp water 1½ cup All purpose flour 1 tsp baking powder 1 tsp baking soda 1 tsp cinnamon powder ¼ tsp nutmeg powder ½ tsp salt ¾ cup blueberries  Icing(optional) ¼ cup powdered sugar 1 Tbsp milk of your choice ½ tsp vanilla essence/extract Method Set oven temperature to 350℉/180℃, let it preheat. Coat a muffin pan with oil or line with cupcake liners or just use silicone muffin moulds. Set aside.  In a bowl mash bananas, add in sugar and oil. Mix well with a whisk. Add sifted flour, baking powder, baking soda, cinnamon powder, nutmeg powder, salt and water. Mix with spatula or spoon until everything combines well.  Add blueberries and give gentle mix. Spoon the batter into muffin moulds and bake in preheated oven for 25 minutes. Once done, let them cool

Finger Millet Energy Bites - Vegan

These extremely nutritious energy bites are great for snacking! Kids will definitely love these bites. Finger millet flour also known as ragi is widely popular in India and is easily available in any Indian grocery store. Finger millets are packed with essential amino acids and are safe for people suffering with gluten allergy. In this recipe, i have used dates, almonds, cashew nuts, shredded coconut, sunflower seeds, coconut oil along with finger millet flour. To make it flavorful like Indian traditional sweets, i have added a teaspoon of cardamom powder. Ingredients  1 cup Finger millet flour/Ragi flour 1 Tbsp Coconut oil 1 cup Chopped mejdool dates (10dates approx.) 1/4 cup Nuts (Almonds and Cashew nuts) 1 Tbsp Sunflower seeds 1 Tbsp Shredded coconut 1/2 tsp Cardamom powder Pinch of salt Directions Soak chopped dates in warm water for 15mins. Dry roast finger millet flour on a pan on medium heat for 5minutes. Keep it aside in a bowl. Dry roast almonds

Pineapple whip is a frozen dessert and it's totally vegan and healthy too! This whip is a perfect dessert to cool off the summer heat! Recipe Author : Himabindu Yield : 2 servings Requirements Blender , Serving cups , Spatula Ingredients 2 cups frozen pineapple 1 ripe banana optional : 1 tbsp honey or maple syrup ½ cup coconut water  Directions Cut a fresh pineapple into cubes and freeze them overnight. Blend all the ingredients in a blender or food processor. Every minute or so, stop and scrape down the sides with a spatula. Blend until evenly creamy consistency is attained. Spoon it into a cup or get fancy with a piping bag and swirl it into a serving cup. Top off with small pineapple cubes and a mint leaf for decoration.

Chocolate covered Oatmeal Banana Cookies

These chocolate covered vegan cookies are soft, full of flavor and consist all the goodness of oats, bananas, raisins and coconut. Recipe Author : Himabindu Yield : 14 cookies Recipe Tutorial Ingredients ¼ cup coconut oil 3 Tbsp brown sugar ½ tsp vanilla extract ½ cup all purpose flour ½ tsp baking soda ½ tsp ground cinnamon ¼ tsp salt 1 cup rolled oats 2 ripe bananas ¼ cup raisins 2 Tbsp toasted coconut flakes 1 cup vegan chocolate chips. Directions Preheat oven to 375℉ or 190℃.  In a large bowl, mix well the coconut oil, brown sugar and vanilla extract until smooth texture is formed. In another bowl, combine the flour, baking soda, cinnamon, salt and stir them into the oil mixture. Add rolled oats and give it a stir. Add mashed bananas and raisins. Combine just until everything is incorporated. Drop them on a cookie sheet with a round spoon and ba
