Spicy Egg Fried Rice

Desi style spicy egg fried rice recipe.
  • 2 cups cooked rice
  • 3 eggs
  • 2 tbsp oil
  • 1½ tbsp finely chopped garlic(5 cloves approx.)
  • 1 tsp finely chopped ginger
  • 1 tsp red chili flakes
  • 2 tsp soy sauce
  • 2 Tbsp hot sauce
  • 3 Tbsp tomato sauce or ketchup
  • 1 tsp white vinegar
  • Salt and pepper
  • 1 Tbsp butter
  • 1 cup finely chopped vegetables(cabbage, carrot, bell peppers )
  • 1 Tbsp chopped green onions
  • 1 tsp chopped cilantro/coriander leaves.
  • In a bowl, beat 3 eggs until frothy. In a pan, Heat 1 tsp oil and add beaten eggs over medium heat. As eggs begin to set, stir gently with a spatula. Continue cooking until no liquid egg remains. Turn off the heat, sprinkle pinch of salt and pepper. Keep the scrambled eggs aside.
  • In a wok, heat 2 tbsp oil over medium heat. Add 1½ Tbsp of finely chopped garlic, 1tsp finely chopped ginger, 1 tsp red chili flakes. Saute for 2 minutes. Add 2 tsp soy sauce, 2 Tbsp hot sauce, 3 Tbsp tomato sauce or ketchup and 1 tsp white vinegar. Stir until it slightly thickens. Turn off heat and transfer the sauce into a bowl and keep it aside.
  • Heat, 1Tbsp butter over medium high heat in the wok. Add finely chopped vegetables. Saute for 4 minutes. Decrease the heat to low and add the prepared sauce. Stir it well.
  • Add 2 cups of cooked rice and scrambled eggs. Give it a mix and turn off the heat. 
  • Add salt and pepper as required.
  • Garnish with chopped green onions and cilantro.
