Sweet Potato Oats Bread


This is a healthy and vegan bread recipe. It has all the goodness of sweet potato, oats, coconut, multigrain flour/whole wheat flour and almond flour. This healthy bread gets touch of sweetness from maple syrup and sweet potato and flavors from cinnamon and nutmeg

Requirements

Loaf pan, large bowl, jar, whisk, spatula, parchment paper.

Ingredients

  • 1½ cup cooked and mashed sweet potatoes
  • 1 cup multigrain or whole wheat flour
  • 1/4 cup almond flour or All purpose flour 
  • 1/4 cup rolled oats
  • 1/4 cup shredded coconut/coconut flakes
  • ½ tsp cinnamon powder
  • ¼ tsp nutmeg powder
  • ½ tsp baking soda
  • 1 tsp baking powder
  • ¼ cup coconut oil
  • ¼ cup maple syrup

Instructions

Preheat oven to 350℉ or 180℃. Grease a loaf pan or line the loaf pan with parchment paper, leaving overhanging on both sides.

In a large bowl, whisk multigrain flour, oats, shredded coconut, almond flour, cinnamon powder, nutmeg powder, baking soda and baking powder. Keep it aside.

In medium bowl or jar, mix mashed sweet potato, maple syrup and coconut oil well. Now combine the wet and dry ingredients.

Drop the batter into greased loaf pan and bake for 35 to 40 minutes. Let the bread sit in loaf pan for 30 minutes after taken out from oven. Remove the bread from loaf pan and let it cool completely. Slice it up and enjoy!
