No-Oven Brownies

This fudgy brownie recipe doesn't need an oven and can be made over stove by steaming method. All you need is a sauce pan with lid, a plate and boiling water. You really need patience to make this recipe because it takes 90 minutes to cook and it’s worth it!

Yield : 8 brownies
Cook time : 1 hr 30 minutes
Ingredients
  • 2 Eggs
  • ¾ cup sugar
  • 1 tsp vanilla essence
  • ⅓ cup or 5 Tbsp cocoa powder
  • ½ cup all purpose flour/maida
  • ½ tsp salt
  • ½ Tbsp milk
  • ½ cup melted butter
Method
  • Line a round or square cake pan that will fit in a sauce pan, with parchment paper or just grease with oil.
  • Place a plate upside down in a large sauce pan or kadai and add boiling water until it reaches top of the plate. Close the lid and let it preheat over medium heat. 
  • Now, in a bowl, whisk eggs at medium high speed for 3 minutes until fluffy and pale yellow using an electric mixer or hand whisk. 
  • Add sugar, vanilla and whisk for 1 minute.
  • Add flour, cocoa powder, salt and mix gently using a spatula or spoon. 
  • Add oil or melted butter and give a gentle mix until everything combines well. Do not mix vigorously or else the air incorporated by the eggs will be lost and results in flat brownies.
  • Pour the batter in a greased cake pan. Cover the cake pan with 2 layers of foil tightly so that the moisture doesn’t go inside. 
  • Place the cake pan carefully in the saucepan, close the lid and steam for 1 hr 30 minutes over medium heat. Make sure to check the water level during the cooking process and add little boiling water if its running low. Note : Do not immerse cake pan in water. Water level should be just below the top of the plate.
  • Once done, take out the cake pan carefully, remove the foil and let it cool for 30 minutes. Do not worry if it's wobbly because it will harden up once it is cooled completely. Then slice and serve with a scoop of vanilla ice cream on top.



Note
  • Do not use a plastic plate in the sauce pan, use a ceramic/glass/steel plate.  
  • Use any baking cake pan that will fit in your sauce pan - round or square.
  • You can add chocolate chips or chunks to make them more fudgier, Can even add a little bit of coffee powder or cinnamon powder to make them more flavorful. 
  • This brownie recipe doesn’t require any rising agents like baking powder or baking soda. The secret for best brownies is good whipping of eggs and folding in the flour mixture gently.
  • This recipe can be baked in oven at 300F temperature for 40 minutes, a toothpick inserted must come clean.
